Rabbit legs with mustard

Ingredients for 4 persons

  • – 1 rabbit in pieces
  • – 1 bouquet garni
  • – 4 shallots
  • – 125 g of bacon
  • – 20 cl of dry white wine
  • – 20 cl of broth
  • – 20 cl heavy cream
  • – 10 g of butter
  • – 1 tablespoon of olive oil
  • – 1 tablespoon of mustard
  • – 2 tablespoons of flour
  • – Pepper
  • – This

Preparation:

Flour the rabbit pieces. Season and brown in a casserole dish with the butter, olive oil, bacon bits, minced shallots, bouquet garni, white wine and broth. Simmer over low heat for 1½ hours.
Remove the rabbit pieces and keep them warm.
Remove the fat from the cooking juices and incorporate the mustard mixed with the cream. Season and replace the rabbit in the casserole.
Reheat and serve
