Easy Roasted Chicken Thighs


  • eight bone-in, skin-on chicken thighs
  • half cup extra-virgin olive oil
  • Juice of one lemon
  • Kosher salt and freshly ground pepper
  • one tablespoon grainy mustard
  • one to two tablespoons honey


In a bowl, toss chicken with oil and lemon juice; season with salt and pepper and marinate one hour.
Preheat oven to three hundred fifty  degrees. Roast chicken, skin-side down, in an oiled roasting pan, twenty to twenty five minutes; flip and roast ten more minutes.
Stir together mustard and honey and season with salt and pepper. Brush glaze onto chicken and broil five minutes.
